Old Fashioned Loaf Cakes from 1968

I was looking through my recipes for more breakfast breads, and found a cookbook from 1968 simply called Cake Cookbook. It has a section on Loaf Cakes, which are basically sweet quick breads or pound cake type recipes. I thought I would share a few that I plan on trying. But first I wanted to share my lemon bread recipe because some of you asked for it. It's not from scratch; but instead uses a cake mix. What I do is wait until cake mixes are on sale for a dollar, and stock up. I never pay more than $1.00 each, to keep the expense down.

Lemon Bread

Ingredients:
1 box lemon cake mix, any brand
1 small box instant lemon pudding
1 cup water
1/2 cup vegetable oil
4 eggs

Beat together all the ingredients in a large bowl on slow to start, then on medium speed for 2-3 minutes. Pour into 2 regular size bread pans that have been sprayed with pan spray, or you can coat in a very light coating of margarine or butter. Bake for 50 minutes in a 350 degree F. oven. Cool before slicing.

Buttermilk Loaf Cake

Ingredients:
2 cups sugar
1/2 pound butter or margarine
6 eggs, separated
3/4 cup buttermilk
3 cups flour
1/2 tsp. salt
1/2 tsp. soda
4 tsp. baking powder
1 tsp. vanilla

Cream sugar and butter; add egg yolks, 1 at a time. Add buttermilk; add flour, salt, soda and baking powder. Add vanilla and beaten eggs whites; pour into loaf pan. Bake at 325 degrees F. for 1 hour or until it tests done with a toothpick. Cool on a rack.

Blackberry Jam Cake

Ingredients:
3/4 cup butter
1 cup sugar
2 cups sifted flour
1 tsp. allspice
1 tsp. ground cloves
1 tsp. cinnamon
3 eggs
1/2 cup sour cream
2 cup blackberry jam

Cream butter. Add sugar and eggs; beat well. Combine flour and spices. Alternate with the sour cream to mix into wet ingredients. Add jam last. Pour into loaf pan that has been sprayed or greased. Bake in a 350 degree F. oven for 40 minutes. Cool on wire rack.

Sunny Citrus Cake

Ingredients:
3/4 cup butter or margarine
1 cup sugar
1 tsp. grated orange rind
1 tsp. vanilla
3 eggs
1 cup orange marmalade
3 cups sifted flour
1 1/2 tsp. baking soda
1 tsp. salt
1 cup buttermilk

Cream butter, sugar, orange rind and vanilla together until fluffy; add eggs 1 at a time, beating well after each addition. Stir in marmalade. Sift flour, soda and salt together; add to first mixture alternating with buttermilk. Turn batter into greased and lined 9 inch tube pan (or Bundt or 9 inch loaf pan) Bake at 350 degree for 1 hour. Cool ten minutes.

Chocolate Marble Cake

Ingredients:
2/3 cup butter or margarine
2 cups sugar
4 eggs, well beaten
3 cups flour
4 tsp. baking powder
1 cup milk
1 square chocolate, melted
1 tsp. vanilla

Cream butter and sugar together. Add well-beaten eggs; mix well. Sift flour and baking powder; add alternately with the milk to mixture. Put 1/3 of batter into a bowl and add melted chocolate. To the white batter; add vanilla. Drop the white batter, then the chocolate by spoonfuls into a well greased tube, Bundt pan or a 9 inch loaf pan. Bake for 1 hour at 350 degrees F. Cool for an hour.

Friday Recipes: Chocolate

January 27th was Chocolate Cake Day, and Valentine's Day is right around the corner. So it seems fitting to share some tasty chocolate treats with you on this cold recipe Friday!

Stacked Heart Cookies

1/2 cup butter or margarine
1 cup firmly packed brown sugar
1 egg
1/2 tsp. vanilla extract
3 ounces melted unsweetened chocolate
1 cup semisweet chocolate chips, melted
1/2 cup finely ground almonds
2 cups flour
1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
3 tablespoons evaporated milk

Preheat oven to 400 degrees. In a large bowl, cream butter and sugar until fluffy. Add egg and beat until smooth. Add vanilla and chocolates, beating until smooth. Stir in nuts. In a another bowl sift together next four ingredients. Stir dry mixture alternately with milk into creamed mixture, mixing until a soft dough form.

On a lightly floured surface. use a floured rolling pin to roll out dough to 1/4 inch thickness. Cut out shapes by using a set of heart cookie cutters in varied sizes or make your own templates out of paper and cut around them with a sharp knife. Transfer cookies to a greased baking sheet. Bake 10-12 minutes. Cool completely on a wire rack. Starting with the largest size stack two of each size cookie together. Tie each stack with a gold ribbon, then wrap in plastic wrap or cellophane. Gather at the top and tie with again with a ribbon and attach a gift tag.


Chocolate Shortbread

1 cup butter
2/3 cup confectioners sugar
1 tsp. vanilla extract
1 1/2 cups all-purpose flour
1/4 cup cocoa
1/4 tsp. salt
Confectioners sugar

In a large bowl, cream butter, sugar and vanilla. In another bowl, combine flour, cocoa and salt. Stir flour mixture into butter mixture. Wrap dough in plastic wrap and chill 30 minutes. Preheat oven to 300 degrees. Press dough into a 15x10x1 inch jelly roll pan. Bake 30 minutes. Remove from oven and cut out warm shortbread in pan using a 2 inch wide heart shaped cookie cutter. Remove cookies from pan and cool on wire rack. Sprinkle cookies with confectioners sugar and store in airtight container.

Notes: Cookies may be given in decorator tins (Victorian designs would be extra special),or decorator cellophane bags. You can also sew very simple tapestry bags and gather the top with a ribbon after inserting a plastic bag with the cookies inside. Wicker baskets lined with antique doilies can be used as well for a beautiful old fashioned look.

Moist Chocolate Cake

1/2 cup cocoa
1 cup hot water
1 cup mayonnaise
1 cup sugar
1 egg
2 cups flour
1 1/2 tsp. baking soda
1 tsp vanilla

Mix cocoa with hot water. Set aside to cool. Mix mayonnaise, sugar and egg together. Add cooled cocoa mixture. Add flour, baking soda, and vanilla. Pour batter into two 8 inch layer cake pans that have been lightly buttered or sprayed. Bake at 375 degrees for 25-30 minutes. Frost with your favorite icing or sprinkle with confectioner's sugar for a snack cake.


Mississippi Mud Cake

1 cup butter
1/2 cup cocoa
2 cups sugar
4 eggs slightly beaten
1-1/2 cups self rising flour
Mini marshmallows

Frosting:

1 box powdered sugar
1/2 cup cocoa
4 oz. butter
1/2 cup milk
1 tsp. vanilla

Preheat oven to 325 degrees F. Melt butter and cocoa together. Add sugar and eggs, then the flour, mixing well. Pour into a 9x13x2 inch greased pan and bake for 25-35 minutes. For icing: Mix all ingredients until smooth. While cake is still hot, but not directly out of the oven, cover top with marshmallows and allow to melt. Spread icing on top of the marshmallows

Chocolate Turtle Cheesecake

1 7 ounce package caramels
1/4 cup evaporated milk
3/4 cup chopped pecans, divided
1 9 inch chocolate crumb piecrust
2 3 ounce cream cheese, softened
1/2 cup sour cream
1 1/4 cups milk
1 package chocolate instant pudding
1/2 cup fudge topping

Place caramels and milk in a heavy saucepan. Heat over medium-low heat stirring continually, until smooth, about 5 minutes. Stir in 1/2 cup chopped pecans. Pour into piecrust.

Combine cream cheese, sour cream and milk in a blender. Process until smooth. Add pudding mix: process for about 30 seconds longer. Pour pudding mixture over caramel layer, covering evenly. Chill, loosely covered, until set, about 15 minutes. Drizzle fudge topping over pudding layer in a decorative pattern. Sprinkle top of cake with remaining pecans. Chill, loosely covered until serving time.

Friday's Recipes: Homemade Cakes

Today I have some cake recipes from a 1968 Cake Cookbook from Favorite Recipes Press. Any of these would be lovely for a Valentine's party or dinner!

Apple Tart Cake

3 c. sugar
8 tbsp.flour
5 tsp. baking powder
1/2 tsp. salt
4 eggs
2 cups chopped pecans
2 cups finely chopped tart apples
2 tsp. vanilla extract

Mix sugar, flour, baking powder and salt together; set aside. Beat eggs until they are lemon colored. Add eggs, pecans, apples and vanilla to dry ingredients; mix well. Pour the batter in greased 9x12 inch loaf pan. Bake 45 minutes at 350 degrees. Cake rises, then falls; makes its own crust. Makes 8-12 servings.

Blackberry Jam Cake

3/4 cup butter
1 cup sugar
3 eggs
2 cups sifted flour
1 tsp. cinnamon
1 tsp. allspice
1 tsp. cloves
1/2 c. sour cream
1 cup blackberry jam

Cream butter. Add sugar and eggs; beat well. Combine flour, cinnamon, allspice and cloves. Alternating sour cream and combined dry ingredients, add to creamed mixture. Add jam; pour into a loaf pan. Bake in a 350 degree oven for 40 minutes. Remove cake from oven; cool on wire rack. Makes 12 servings.

Chocolate Upside-Down Cake

3/4 cup sugar
3 tbsp. cocoa
1/2 cup nuts
1 tsp. vanilla extract
1/2 cup milk
2 tsp. butter, melted
1 cup flour
2 tsp. baking powder

Combine all ingredients; mix thoroughly. Pour into 9 inch square pan.

Topping:
1/2 cup brown sugar
1 tbsp. cocoa
dash of salt
1 1/2 c. hot water

Mix sugar, cocoa, and salt; sprinkle over batter. Pour hot water over batter. Bake at 375 degrees for 20 minutes. Serve with whipped cream. Makes 4 servings.

Party Coffee Cake

1/2 lb. butter
1 1/2 cup sugar
3 eggs
1 cup sour cream
2 1/2 cup sifted flour
2 tsp. baking powder
1 tsp.soda
1 tsp. lemon juice
1 tsp. cinnamon
1 cup chopped nuts

Cream butter and 1 cup sugar. Add eggs, one at a time, beating well after each addition. Add sour cream, then sifted dry ingredients. Add flavorings. Put half of the batter in well greased 8x12 inch pan. Sprinkle with 1/2 mixture of 1/2 cup sugar, cinnamon and nuts. Add rest of butter and top with rest of sugar mixture.Bake 35-40 minutes at 350 degrees. Makes 20 servings.
