Easy Potluck Dishes

This weekend we are attending a family reunion, and it made me think you all would enjoy some recipes you could use for family gatherings. One thing I've done is mixed together cantaloupe, blueberries, strawberries and watermelon in a plastic bowl with a cover the night before the reunion. The juices mix and it doesn't even need a dressing. There is never any left when I bring this dish!

Caramel Apple Dessert
Ingredients:

1 (3.5 ounce box) instant Vanilla Pudding
1 cup 2% milk
1 container (8 ounce) Cool Whip
6-8 Granny Smith Apples,diced
6 Snicker bars, refrigerated and diced

Mix pudding mix with milk with a whisk. Fold in the Cool Whip and chill for at least 1 hour. Right before serving carefully mix in the diced apples and Snickers.

Pasta Crab Salad

Ingredients:
1/2 c. mayonnaise
1/2 c. creamy Caesar salad dressing
2 tbsp. milk
1 (8 oz.) pkg. crab meat, diced
8 oz. small pasta shells, cooked and drained
2 green onions, minced
Optional: Peas, green pepper
Ground Black Pepper


Mix the mayonnaise and salad dressing plus the milk in a measuring cup or
container. Season with pepper. In a large serving bowl combine the crab,
green onions and pasta. Fold in the dressing and mix well. Cover and chill.

Cheese and Potato Bake

Ingredients:
2 lb. frozen, cubed hash browns
1/2 cup butter
1 can cream of chicken soup
1 cup sour cream
1 cup milk
8 oz. shredded Sharp Cheddar cheese
1/2 tsp. pepper

Mix all ingredients well and spread into casserole. Bake at 350°F for 1 hours or until lightly browned and cheese bubbles.

Notes: You can put this in a crock pot to keep it warm if needed. If you cook it in the morning and wrap it in a heavy towel to transport it should still be warm for lunch.
